Caramel & Apple Loaf Cake

I baked this cake nearly a year ago. I wanted to use my new cake mixer that I had received for my birthday. Originally I was going to make a loaf cake which was banoffee and thats why I had caramel ready.


BUT instead my boyfriend has an apple tree in the garden and we had been collecting some of them to give to my mother. We found so many and thought what would be better than bake an apple & caramel cake.

New cake mixer that my friends kindly brought for my birthday!



It was so much fun being able to use a big mixer as I only had a hand whisk before and was a lot quicker to us. Can't wait to make more things in it and try the different attachments. I want to make cinnamon buns at some point now I have the dough blade.



I swirled the caramel in the cake batter to bake with the apples within the mix.



Once out of the oven I put more caramel over the top and poked homes with a fork so the caramel soaked down inside into the cake. It did create a very sticky messy cake but was delicious.
