I didn’t want to use my usual carrot cake recipe for my son’s birthday cake this year as I wanted a bigger cake.
I did make a few changes and this is what I used:
golden caster sugar 200g
Dark brown sugar 75g
1tsp cinnamon
1tsp nutmeg
Icing
2 tubs maspone cheese
1 butter
Ice sugar 500g
Everything was going so well with the sponge and looked so smooth then i started icing the cake.
When I began icing they looked so cute being star shaped and was really happy with how it was going.
This is when it all started to go wrong, the icing wasn’t set enough. I made a silly decision of icing the cake by the window with the sun shinnying in so it started to slide.
I had to keep taking the cake out the fridge then re ice the middle then prop up the cake in the fridge to full set. Total nightmare
The cake still tasted amazing and my son was super happy with it! So the lesson learnt in this, don’t ice a cake in heat by a window.
