Jam Cupcakes

One of my friends is expecting their first child so we arranged a surprise baby shower for her. I decided to make some cupcakes for the little party with a pink theme.


I wanted to use a recipe that used jam and vanilla frosting on top so I went with this recipe -


I absolutely love using Jane patisserie recipes as they are so easy to follow.

I do however want mine to be cupcake and not sandwiches so there is a few changes.


As we were planning the party on a week day I had to fit in baking the cakes around work so baked the cakes the day before the party.


I always used an ice cream scope to put in the cake cases, it measures perfectly. I do however need to invest in a scooper that can unload the mix into the case rather than faff around trying get it in with another spoon.

The cupcakes came out a lovely colour, I am okay with them not being flat as I’ll be putting jam in the middle.



The next day:


I cut a hole in the cake with a spoon to fill the jam in then covered back over with the cake like a little hat. I did them all a bit differently as I wasn’t sure how much jam to put in them all.


This is where it all started to go a bit wrong. I forgot to take into consideration that I would need more icing than the recipe as it is going on top. I also didn’t leave the butter out so trying to make buttercream was hard butter was not going well at all.

I had also made the pink too bright I wanted it more pastel but didn’t have the time to change it and just had to go with it. The buttercream was not as soft as it should be and this is something I keep struggling with. I think I need to start practicing making it more as I hadn’t made it for a while.



The frosting did not turn out how I would like it was messy in places but we still had cake for the party. They tasted great and thats the main thing!


My boyfriends cat even enjoyed a sneaky lick!
